What happens if you do not solder the white wire on the iPhone?
Charging broke, soldered all the wires except white, charges. I don’t know about pinouts, tell me, what are the consequences? (burn out the battery or something else) and is it possible to leave it like that?)

Burn out - how? It’s quite slow to charge (but it’s unlikely, it’s done differently there), most likely it’s a data wire (one of two), i.e. only affects connection to computer/other devices.
But, there is a danger that an unsoldered wire can be shorted to one of the power wires in the same connector, and then ... at least it must be isolated (with blue electrical tape, yeah).
you don’t have to fumble in the pinout, it’s enough to have the skills of elementary googling to enter “<connector> pinout” and see, and to understand what goes where, you need another 15 minutes of reading.
most likely this is one of the signal wires.
If charging is on, it means "everything is good" - the power ones are soldered and seem to be correct :)
