How do ransomware viruses encrypt files, because there are a lot of them, or do they encrypt only certain directories?

Alternately. Take and encrypt. Of course, they don’t encrypt everything, but only documents, photos, videos, and not all photos either - for example, they don’t encrypt gif. Well, of course, the virus is the lupus est virus, but at least the one that one of my colleagues ran into - it was just like that - it encrypted all documents, photos, videos - but didn't touch the gif :)
