What equipment to choose for the workshop?

Good afternoon.
There is a workshop with the Internet connected there through the Ubiquiti Carrier POE Adapter
. Also, it seems, according to the authorities, there is a Nanostation from the head office, which is located 27 km from the workshop.
There are:
7 jobs (system unit / monoblock + printer and phone for directors)
At the moment, only one computer is set up
2-3 ip phones (at the moment, Trunk has installed two adapters for Hanlong Unicorn VoIP telephony)
One of which works only on a speakerphone connection (there is simply no second one)
Everything works at the moment like this 5aef265eddc54b6184b81875ddf02f7c.png
Task:
1) Set up 7 jobs
2) Set up telephony for 3 phones
3) In the future, video surveillance is planned
4) Set up a connection with 1s server at the head office
Question.
What equipment is needed to solve this problem.
At the moment, a couple of options have been proposed:
1) Cisco Catalyst WS-C2960-24PC-L switch
or
2) MikroTik RB2011UiAS-2HnD-IN + switch

Why do you need switches with SFP? You don't seem to mention optics in the case. Your network is homogeneous, there is no Wi-Fi inside the network, you do not require traffic filtering.
Take any 24 port managed switch. If you are planning video surveillance based on IP cameras, take a switch with PoE ports right away.

1) Cisco Catalyst WS-C2960-24PC-L switch
or
2) MikroTik RB2011UiAS-2HnD-IN + switch

Catalyst will not be able to route, it will still need some kind of router in addition.
See what that means. Do I need internal telephony and who sets it up? If only external numbers are given, then a separate device is needed for each phone.
