- Transferred data volume
- Session start and end time
- Encrypted traffic
In principle, this is already enough to take you on a pencil, unless both VPN points are located in Russia :)

If the tunnel is encrypted, then the provider sees that the traffic is coming from your device to the VPN server, and what's next, he does not see.

The provider sees the endpoint of the tunnel, if the tunnel is encrypted, then the content of the traffic is not available to the provider. But keep in mind that if it occurred to you to download through the tunnel to a personal vds on a hetzner CPU or the like, then with due interest, the traffic can be removed from the hoster at the output.
