What DHCP server do you use on Linux and how do you manage hosts?

Actually 2 questions. My situation is this:
1. DNSMASQ / ISC-DHCP-SERVER (either one or the other)
2. Console.
Host management refers to "reserving/removing" IP by MAC.

IMHO!
DNSMASQ is a kind of combine that has everything. I am a supporter of doing all this myself, and knowing how and what works.
Put isc-dhcp-server, bind9 it will be enough for management.
