What book would you recommend on Apache?

And maybe right away by setting up LAMP.

Why do you need a book? It's not a book, it needs a chapter from a book. Find some article on the basics of configuring Apache. There you will be described 80% of all tasks. Look for the rest in the documentation as needed.
Well, maybe it's worth finding a separate article on setting up the rewrite module, because it's very tricky and deserves a separate topic.

Better read about Nginx, Apache is a relic of the 90s.

Why LAMP? Not Nginx + fastcgi (php-fpm) + (mysql | postgresql | mongodb) + memcached?
