2010 will not be useful to you, but it would be useful to study 2016, and even better 2019, although they are different from 2013. Learn PowerShell is a must have!!!
Pluralsight has good courses on Exchange, Microsoft has a lot of good information on Exchange on Channel9.
Microsoft also allows you to download trials for Exchange. You can make your own virtual with Exchange and train on cats.
Exchange itself is not very complicated, but it is strongly tied to AD, so you need to understand how it works. The DAG will be required to study if Exchange is deployed in a large organization.
Well, a lot of people are switching to Exchange Online (O365). So this should also be studied. If the organization is large, you will have to learn Azure.
Many organizations have a Hybrid configuration, this is when some of the servers are on premises, and the other is in the Cloud.
Better practice and Technet is hard to come up with.
From books, the Microsoft Exchange 2013 Inside Out series was useful to me

There are official training books for Microsoft 2013, everything is explained there step by step. It doesn't even make sense to watch the video. Only practice, only hardcore. Write me on telegram abraham8080
