How and with what help, in your opinion, is it best to organize automatic assembly of source codes on the server? For now, I plan to use lessphp with my own script, but maybe there are more advanced and functional solutions?..

It is best to collect sources not on the server. Unless on a CI server. We make a build, and deploy only build artifacts.
