What are open-source projects for Junior ASP.NET Core developer?

Open source projects for juniors do not exist in nature. There are just projects, in any of which you can poke your head. You can start by writing / translating documentation and editing typos in resources and code. But usually people immerse themselves in the project that they use themselves.

Why do you need someone else's project? Make, for starters, some kind of blog with an admin page. The documentation on architecture is complete.
