Vue 2 or Vue 3?
Obviously, technically, Vue 3 is newer, faster, weighs less, and so on.
But, as I see, most (probably 80%) plugins work only with Vue 2.
All Nuxt's also only work with the second version, and when it will be released on the third one is unknown.
Should I start projects on Vue 3? Or does it make sense to wait a while?

IMHO it's still early, at least for now the official section of the vue site with docks on the 3rd one - on a separate domain they have: https://v3.vuejs.org/ - i.e. the creators (Evan and the team) seem to understand and hint how the 3rd version is still damp and not supported by anyone, so that users do not get confused and immediately get to the old docks for the time being.
I'm always for novelty. Start with the third one, why keep deprecated?
