What languages, what encoding? (besides European languages, there are also Asian languages)

UTF is a Unicode Transformation Format, which means that this encoding is for Unicode characters, and this standard is just designed to universally encode all possible characters, including ancient dead languages. Feel free to use UTF-8. All character tables - at Unicode.org

Full Unicode includes almost all known alphabets. UTF-8 is just a variant of Unicode character encoding. For a complete set, you must use utb8mb4.
