UTF - which languages have which encoding?

I have 14 languages on my site.

What languages, what encoding? (besides European languages, there are also Asian languages)
Because of this, I doubt that all languages can have support for utf-8 general_ci

UTF is a Unicode Transformation Format, which means that this encoding is for Unicode characters, and this standard is just designed to universally encode all possible characters, including ancient dead languages. Feel free to use UTF-8. All character tables - at Unicode.org
