Traffic analyzer for debugging mobile applications?

Traffic analysis

The bottom line is this - an application developed for ipad communicates with a web service via HTTP.
I would like to see live what is being sent and received, as well as be able to record and play back these scenarios.
I would be grateful if you advise similar software for Win, Linux

For recording wireshark traffic, for curl requests. Of course, there may be something more convenient, but wireshark + curl is a more universal way.
