There is no sender's address, and id in the letter. How to fix?

We have this picture: If we connect via telnet 127.0.0.1 25 or 192.168.0.107, and try to send a letter, everything is fine

The mail client must specify these headers itself. How will the mail server determine the sender if it knows at best rDNS the user's IP address?
