Connect the tablet to the computer as a drive. Try running a file recovery program. Of the paid ones, R-Studio is very good, but there are also free ones.

If the tablet was an iPad, then in theory there was a backup copy. Restore it via iCloud and the documents will be restored. But this is IF iPad
