The provider switches to GPON, what benefits will I get as a subscriber?

Good afternoon. My ISP has announced a gradual transition to GPON technology.
What will it give me compared to the current Ethernet connection technology?
I googled yesterday and in general realized that through GPON, the reception and return up to 1.5 gigabits / sec rises to 2.5 gigabits / sec.
A couple of questions still remain open.
1) Do I need to change my router to another one that is under GPON. Or I will still have a twisted pair cable to the router.
2) Will this technology give me a stable Internet while using IPTV. Since now if I download something through a torrent, then IPTV crumbles into squares.

The router will have to be changed, but this is the provider's concern. I won’t tell you about iptv, but I think nothing will change - if you download a torrent to a full channel, then there is no bandwidth left for iptv and the picture will crumble.
