Better 2, but the best, than a pile of garbage. Because the mistakes of bad work will be remembered better than the quality of good ones. In addition, the employer will not be aware that the work is already old and you have learned a lot since then, and will think that this is your current level.

Add those projects that show your skills as fully as possible.
I don't bother with old projects and post them because they give an idea of ​​my experience.

Well, if you only have 2-3 works, then add everything. But I would personally put them in order, correct the code, format it, write comments, a little documentation, and put it on github with a normal README.md.
If there are a lot of works, then it is better to leave only high-quality ones that you are personally proud of, and which are not very old. Usually not much work is needed, depending on the complexity.
