The growth in the number of projects, how to maintain quality?

Greetings to all

I am a project owner and a bit of a project manager, QA specialist. Once I programmed, so I understand all the basic logic of the processes perfectly and more or less understand the functionality of the framework on which we develop all projects.

I create various projects (I write technical specifications), improve existing ones, use the services of freelancers (programming, design, layout)

But something is missing. I always strive to grow and improve not only projects but also all other processes that are associated with development.

The number of projects increases, projects require more attention, quality decreases due to quantity, there is less time for competitor analysis, etc.

That's the question itself, how to move up a notch and maintain quality, in fact, it turns out that I lack a Jedi who would be both a Project manager and a QA, an Analyst and that would help to draw up technical specifications, etc.

1) What do you think about this?
2) What to read?
3) How to deal with a large number of projects?
4) Where to see the checklist to check how your project matches the modern project.

For example :
Backend Framework Frontend Framework
Code
repository
virtualenv
Full text search engine
SEO
HTML5
Caching
Mobile app
Responsive design
Clean code
etc…

By occupation, I manage many projects.
We use the structure Seller - Analyst - Project Manager - Developers (programmers, designers, testers, ...) We
are currently changing the project management system, but have not yet chosen which one.
We sometimes use TeamLab with external organizations, as well as bitbucket
We have our own written system HelpDesk and ReclamationsDB

Well, at least start with a project management system, and the larger and more serious the projects, the more specialists in it, the more seriously you need to choose a management system. For small and medium projects - Basecamp, for more complex JIRA.
The quality of the work itself depends on the specialists involved and on the correct formulation of the problem.
At the first stage, spend more time on technical specifications, the scheme of interaction of algorithms, the structure of the project, etc. and most of the subsequent bugs, disagreements and other things will disappear by themselves.

When you work with freelancers, it's hard to connect everyone to some kind of project management system. Many freelancers simply don't want to bother, especially designers and layout designers. Of course, if the project is large and you need to draw and typeset 100 pages, then you can agree.
