Systematization and structuring of data. Which tool to choose?

Friends, hello everyone!
I am a Bar Manager, for understanding - it's like a chef, only in a bar.
Over the years of work, I have accumulated a lot of handwritten waste paper with recipes for alcoholic and non-alcoholic drinks, various techniques and methods of preparation, tasting notes on wines and spirits.
The question arose about the systematization and structuring of all this data.
At first there was an attempt to do it in Excel, but I quickly realized that its functionality is insufficient and I need to do something with my own hands. Scalable and flexible in terms of adding new functionality, etc.
Where to read about solving such problems, in the direction of which tool to look? I would appreciate any help!

I think you have very mixed information. Therefore, I would advise the front on any technology that would work on api with elasticsearch. It can store heterogeneous information in json and has full-text search. For ease of raising the elk stack, you can use graylog
