Solution for filtering (sorting) incoming mail?

Tell me, pliz, on what to implement the solution of the following problem:
There are:
- incoming letters on several domains
- there are a lot of letters
It is necessary:
​​- to configure the forwarding of letters according to the given rules
- the rules for each addressee (from where sent) can be different.
- the rules are ready to be written by hand for each addressee
*) it will be great if the rules can be such as:
- for the presence of a word-phrase in the subject (or letter);
- and others, customizable
- If there is some kind of analytics (sending to addresses) - generally great.
It is not necessary:
​​- to store all these letters.
As an option - they looked at Exchange - but something with the rules did not work out there. :)))

Dovecot + sieve and do whatever you like

It is better to do this, as already mentioned above, using sieve on the server and, indeed, Dovecot knows how to do this very well. Moreover, it contains the ability to use managesieve, when the end user has the ability to set these rules for sorting, forwarding, etc. from the interface of your mail client. In particular, Roundcube can do this.

If there is an eksch, then everything with the rules is not just good, but very good :) You just need to be able to cook them and use Outlook exclusively.
(In general, if you use only Outlook - eksch is a super-duper combine!)
If you use other clients, then sieve. For TB in particular, there is a plugin that allows you to edit sieve rules (through managesieve of course) directly in the client, which is very convenient.
The only thing I don't know how to do in it is how to search for Cyrillic in the subject or body of the email :)
