I noticed that social networks publish statistics for advertisers: viewing depth, viewing time, number of visitors. But how do they collect it, while not providing data on the social graph to third-party companies (like Google or Yandex)?

The social graph is a great value that no one will discover just like that. Without a graph, the statistics can certainly be called into question. But, guided by these statistics, an experienced advertiser will quickly understand how real it is.
What kind of nonsense? What is the connection in general between the social graph (who is friends with whom) and page viewing statistics?
On the same connect.ua, in the code of the pages there is a regular big world counter. On VKontakte, the usual LiveInternet counter also used to stand, now apparently they have made their own statistics.
And by itself, no one hides the count. Would you like to upload my FB friends list? Please:

Just use this graph to import my friends to another social network. the network is not convenient. there is no reliable clue in the graph to determine who owns the account.
Imagine the situation: you wrote your social network X, you have millions of users there, they are friends with each other. And you want your users to be able to "export" Facebook friends to your site. Link accounts from your X network to Facebook accounts. So that you, the owner of the network, can poke at ANY user from your X network and associate a Facebook account with him (unless, of course, this user of your network has a Facebook account)
So, the bottom line is that with the current graph API, this cannot be done if only ALL users will not manually specify a link to their FB account.
