You have a work task. You choose the tools to solve it. If the tool is suitable for solving it, makes life easier for you - you use it. If the tool is not suitable for solving the problem and only complicates everything out of the blue - you do not use it. And you can replace the word "bootstrap" with any other tool name, the logic remains the same. And just to get acquainted with some tool for broadening one's horizons will not be superfluous. At least you will know what tasks it is suitable for and in the future you will make a more informed choice.
From bootstrap, you only need the grid. Nothing else is used anywhere (with the very rare exception of supporting sites created in the first year of the bootstrap). The grid is worth knowing based on the fact that 80% of freelance layouts are made according to it. But often it is absolutely useless there, so even if there is a grid in the layout, the site can be typeset without it. But here it all depends on each layout specifically, whether the bootstrap will simplify your life or not.
