Should I mess with Docker?

The goal is to quickly deploy pre-configured application instances on servers.
Now everything works under proxmox-openvz virtualization + shell scripts for configuration.
What I don't like about the current solution:
1) the old-school solution is subjective, but all this is very difficult to edit if necessary, to control it so that it does not fall.
2) explicit redundancy of processes: in each container, dofiga of everything that is generally not needed is running. For example, the ssh process is probably not needed everywhere .. as a result, on the host machine there are 500+ processes from 4 virtual machines.
Confused in docker - what to use to manage them? I want some gui. Panamax\shipyard\dockerui is googled - looks "very beta".

Rancher (as a docker controller) and the current is on the way. between the ranscher and the docker there can be kubernetes, swarm and other...

Why don't you want to use puppet/chef/salt/ansible?
Docker is suitable for your task, but it will be very different from the working environment, and it makes no sense to use it on the working environment, because it will already be the second level of virtualization after vagrant.
