I want to set up RAID10 for storing and distributing media files (video). Is it worth using the parameters:
barrier=0,commit=60,noatime,data=writeback,journal_async_commit
Or can it negatively affect data consistency?

For soft raid data=writeback is better not to do.
You can do it without risking data noatime, nodiratime, noacl
, and you can play with the rest when the raid is hard and with BBU.
Better not, the speed will be normal anyway.
And these schoolboys are just bad advice.
