A UI designer is engaged in UI, and identity is a brand designer, identity designer, corporate identity designer, these guys are called differently. Just as a pediatrician will not be a good anesthesiologist, a UI designer will not be a good identity designer. Can do something, but at a low level. If you say "should", then no, you shouldn't.

And also, a UI designer should not: collect functional requirements, develop UX, write texts, conduct photo shoots, communicate with a customer, conduct presentations, and much more.
But in our realities, due to total lack of professionalism, the immaturity of the market, and it is not known what other reasons, most often no one will give you anything. Or they will give it, but of such quality that it was better to write this text yourself or take an iPhone, two paper, make a cyclorama out of them and generate content for yourself that is already better than what you were given. From personal experience, I can say that this applies not only to small provincial agencies, but also to companies with a name, offices in 11 countries and 9k+ employees.
In the work of a designer, initiative and independence are important. Do you want to make a cool project? Take it into your own hands and do whatever is necessary for the result, otherwise, later, believe me, you will not want to post it on behance or show it to your friends.
And then, what's wrong with the fact that you get the opportunity to generate "extra" work for yourself? If you are freelancing, you will get a new project and money, if you are self-employed, then these are a couple of extra arguments for raising your salary.
