Set encoding for outgoing Exchange 2010 messages

Hello,

By default, Outlook 2010 uses koi8-r to send messages.

Who can tell the thread how to change this at the domain level so that all letters are sent in utf8?

I looked in the direction of CharacterSet from the Set-RemoteDomain cmdlet, but as I understand it, this does not solve the problem.
