Is there such an online business management service where you can assign the entered data yourself (for example, make a form for making an order), build reports yourself.
I know about all kinds of accounting, but this is not the same.

I answer in order.
1. There are a lot of foreign analogues, but in terms of price-quality ratio, IMHO, 1C is optimal for us.
2. Regarding the plates, the question is not very clear, but if g.docs is not convenient, you can use alternatives - dropbox or analogues, you can simply raise a server with rdp access, you can use SVN (very simple) or Git (more flexible).
For collaboration (like groupware), you can use the free teamlab service .
