I know about the existence of SCADA systems, and it even seems to suit me, but I would like to consider more options.

well, the scope of the process control system is very extensive, but usually there is a production line that produces a specific type of product, respectively, automation controls those processes (maintaining the necessary proportions of pressure temperature, etc.) as well as emergency situations. in total there is a harness of sensors, and controllers (or relays) and a brain in the form of SCADA for example wincc.
And in relation to minecraft and GregTech, try to make a terminal that solves a set of tasks:
1 inventory and resource management
2 management of simple production chains (ore -> ingots or ingots -> wires)
3 management of complex production chains - order the required number of simple components in simple chains and then assemble a complex component from them
