Python or Java for backend + working with OpenCV?

Hello, I’m at a crossroads and don’t know what to choose .. (so far I’ve only worked with PHP, JS, Java - but here it’s quite a bit, which you can probably not count)
Please help me choose what is best for the task:
Service with object recognition in the image and its further processing and output of a new image with this object.
For example, in a photo, you need to recognize an asterisk, process it, find data about it, and return variants of this star in other colors to the client (the first thing that came to mind)
I would be very grateful for the answers ..
