* DHCP server
* TFTP server
* NFS
* Syslinux (part of pxelinux.0, to be more precise)
* You can also use an HTTP server, I noticed that pulling the kernel and initrd from it is faster.
If you need win - similarly load some kind of distro like thinstation and make a terminal server on win-server.
