Joomla! 1.5+ is based on its own OOP framework, using MVC. The API is pretty well described.

HostCMS is a Russian development, one of the best commercial CMS in my opinion. Has a very functional free edition.
Written in PHP5 OOP, has a modular structure, clearly follows the MVC paradigm, uses XSLT templating. It has a well-documented API and the ability to write your own modules.
The project is lively and dynamically developing, very prompt technical support and a forum where you can look for a solution to the problem yourself.

Get Magento. It is very cumbersome, but written using a competent framework, and, judging by the rumors, it is quite competently written itself. Although the entry point is probably high in it.

MODx 2.0, which is Revolution. Not a bad CMS with a slightly unusual approach. From sensible OOP - there is an xPDO engine. A huge minus is that there is not enough documentation even in English, but the community usually helps. At my request, they wrote a couple of articles for the documentation, which were very necessary.
