Are PIC32s up to date? Where are they applied?
What are the pros and cons compared to STM32?

Not relevant, only to support older devices, also with AVR. Lose in price (several times), energy efficiency, performance. Half of Microhip's devices are ARM Cortex-M. If you want to use the familiar peripherals from Microchip, then you can use their workstations, although ST is generally cheaper
