It would be nice, of course, to know the masks of the internal networks of the servers. Let's assume /24.
If servers 1 and 2 are in the same network (between themselves), then you need to add a route to server 2 through the tunnel to the client or to its config or send this route from the server using push. At the same time, on server 2, you need to add a route to the network 10.8.1.0/24 through server 1.
If the servers are in different networks, then a tunnel is built between them and further according to the same scheme, that is, the route on the client.
