I'm doing it from scratch, because I want to use this template in the future for future projects + the experience is good.
The problem is that I need to make an online store (catalog, product page and cart). Without unnecessary troubles: just Catalog - Product - Order - Basket. without payment systems, etc. Products no more than 300
I do not know how to approach. I would be grateful if you point me in the right direction.
Finish your theme already on WP with the WooCommerce plugin right in the admin panel? Either Java + Php, but then how to integrate it all with the admin panel. In general, I'm at an impasse, tell me please.

How about taking a CMS specially designed for online stores (OpenCart, PrestaShop, UMI.CMS, etc.) and not bother?

I would highly advise against pulling the layout yourself.
For: now there are big requirements of search engines, you need to be a pro to get a good approval. You want to receive orders, to advance in the search engine for this you need. And your layout will not be ice, for example, it will not be sharpened for mobile devices, for example, there will be errors - it will not pass under w3c standards, etc.
So in order to start earning and have some experience and a penny then it’s not a pity to give away - take a ready-made solution - a premium template, you can try some free one for a start, but it’s imperative that it passes well tests on google page speed insight, on gtmetrix and then you will be happy.
Here you have to choose - either you study, then forget about a good online store and the return on it, or you approach this as a business - and then you need to invest and then get a return on the online store.
