You can turn off the display of statuses, client icons - it will be quite minimalistic.
You can also customize the chat window. Remove (not suitable for your requirements, in my opinion) WebKit-mode. Or try to find a suitable theme.

The most minimalistic is Faim. The size of the binary is 34 kb. Much more minimalistic :))
