I would like to check incoming traffic without leaving the cash register, and only after that transfer it to local machines for analysis. But I don't understand how to implement it better. Maybe someone has ideas?

We mark the necessary traffic, we give the marked traffic to the intermediate server, from where it returns back and goes to the clients or vice versa to the network. In principle, you can make such a scheme, you need to test the speed.
