Maybe it's better to take a grandfather? Or stay on a VPS?
If there are dozens of sites. You don't need a lot of resources for the site. I still use VPSs on digital ocean and analogues for $5/month for each site. They give 512Mb - 1 Gb of memory and 20 Gb of space. It takes, it seems.
Would it make sense to buy a dedik for them instead of all these vps? Cheaper or better in some way? Or is it better to keep them on VPS? I'm talking about dedics for about $ 50 / month.

What's the point in dedicate? Are these resources really needed? If the load is small, then we will put 15 sites - well, increase the tariff to that for $10/month. And you will live happily again. And it's cheaper than a grandfather.
It makes no sense to buy a dedicated server just like that, without a reasonable need

Don't put your eggs in one basket
Normal VPS will have higher reliability. At least disk arrays were taken care of.
If we consider 50 euros, then the price will be the same, there are no other advantages
a dedicated server also gives you a personal network channel that does not need to be shared with other VPS clients on nodes.
also a bunch of VPS can cost more with a very large upgrade than a dedicated server.
in principle, we will upgrade both if necessary.
