In general, Exchange is primarily a collaboration tool/platform for applications. If you need a purely mail server role and do not plan other use cases, then this is not the best choice.

There are no special needs for 150 users. For storage, it is better to use RAID 1-0, so put 4 disks per server, 16 GB of RAM, the processor does not play a special role (64 bit support is required).
Be sure to lay down 2 servers. If you feel sorry for two servers, it is better to use an external mail hosting (biz.mail.ru, pdd.yandex.ru, apps.google.com).
