Linux where are my encrypted folders?

I have a server on it with two partitions /boot and root ( / )
How can I make it so that it asks for a password for / when booting?
I'm a little afraid to do this, because the virtual machines are already working there, or maybe someone will tell you how easy it is to encrypt the folder in which the virtual machines are stored
On the server, OpenNebula is used
