How does the facebook or instagram application transfer cookies to mob. browser. And does it transmit at all?

No way.
But there is one caveat - if you open a link in the browser to the application site from the application - be prepared for the fact that the application can attach a parameter to the link with which the social network will recognize you and set the cookie. If you do not open links from such applications with a browser, then transmission is possible only through the exploitation of some kind of vulnerability, and such cases must be reported.
