Is uBlock Origin safe in Safari?

In the Safari extensions tab, I read that uBlock Origin can

read, modify and transmit the content of web pages, including sensitive information such as passwords, phone numbers or credit card information.

Does the add-on really get access to passwords and other confidential information, and can transfer them to who knows where?

If your add-on can interact with browser pages where you enter all this information, naturally it can have access. Theoretically , it can isolate this data and do something with it. Only this is typical for a significant number of efficient plug-ins, as well as just programs (in which, of course, this is not necessarily reported).
