Is there a way when building a form through the FormBuilder to specify which widget will be used to render the field?

The date type has a setting 'widget'=> 'simple_text', but there is nothing like that for choice.

What widget do you need? As far as I remember, choice can be either a select or a group of radio buttons.
You need to look somewhere in the direction of the multiple and expanded options
