You need a program to track the actions on the computer of an outsider with the following functionality:
1) You can see which file / program was opened on the computer
2) You can see when these files were opened (date, time)
3) The program records keystrokes (like a keylogger, for example ardamax keylogger.Assuming further advice, I’ll say: ardamax is bad because you can’t see which files were opened in it if nothing was entered into them from the keyboard.That is, if an attacker simply opened a file and did not enter anything into it, then this is not fixed in ardamax )
The "recent documents" function is not an option, since an attacker can easily clear the list of recently opened documents.

Usually for such things they use SMP - User Monitoring Systems. But SMP does not monitor file openings - as unnecessary, this is too low-level thing, one office opens and closes hundreds and thousands of files in the process. But keylogging is there, crooked though - the text in the report is usually mixed. If you need exactly what you need - you have to write yourself.
