Is there a free or inexpensive program (service) for monitoring small production?

I want something like a simple CRM to organize the work of small-scale production. We produce a product which, in turn, consists of 2-5 different parts, you need to track their production by different workers at different stages. Until some time, there were enough google tables, but when 5 people began to edit them, a mess ensued. Ideally, you want an open source solution that you can put on your server.

Firstly, CRM has nothing to do with production and accounting, this is somewhat of a different opera.
Secondly, nothing free comes to mind. From 1C, under the described requirements, it is best to look at "1C: Management of our company" (UNF). Functionally, the UNF has income, expenditure, control of the balance of materials, finished products, cash, production, and much more (including some CRM). There is both a "boxed" version of UNF, which can be installed on your server, and in the cloud. The cloud version is initially cross-platform and allows you to work using a regular web browser from any device with Internet access + there are 1C thin client distributions for different operating systems (Windows, Linux, MacOS, iOS, Android). For the first month you canget free access to the cloud version of 1C:UNF.
The possibility of migrating a typical UNF database from its server to the cloud and vice versa is supported, i.e. if the program suits functionally, then it will be possible to transfer the database with all the data entered in the month in the cloud to your server and continue working.
