Is the uniqueness of the text tied to a separate page or to a domain? I want to delete a lot of pages of the third level, throwing the text on the branch above. How will this affect rankings or will I break the Internet.

Text uniqueness is a property of text. It has nothing to do with the page or domain. If you change the address of the page on which some text was placed, then this does not affect its uniqueness in any way, if the url change was done correctly - 301 redirect from the old url to the new one. Over time, old addresses will disappear from the search engine index, and new ones will appear.
