I'm creating a paid game and I have a question. Can I temporarily not specify a payment profile so that the money accumulates on my account, and then just withdraw it when I open an IP or not?

Without a profile, you won't even be able to create purchases and make the game paid. So it's necessary anyway. Or the game will be free and without purchases.
