Is the content created in the 30-day Trial version of the program legal?

I will clarify the question on a specific example, but the question is rather general, for any such "trial" programs. Let's say the most banal thing: I download a 30-day version of 3ds max and make a model on it, after which I sell it. Can Autodesk sue me? they say, I didn’t buy it, but I made it and use it for commercial purposes.

You need to read the user agreement. If it states that the trial version is provided for informational purposes only, then the content created will indeed be illegal.
For example, in a similar spirit Macaw is sold for students. They can get a 50% discount on software purchases, but they cannot use it for commercial purposes:
"By applying this discount you acknowledge that you will use your Macaw Learners Account for learning purposes only (as a student, educator, or as someone who is just learning HTML and design).
