Which is better to use, Redux or mobX?

Do you like redux? If so, keep exploring: there are a ton of vacancies. If not (for example, it makes me sick) - look at other options, you might like it.
If you don’t like anything at all, and you are here purely because of the money, there are still more vacancies for react + redux and will last for a long time.
