Is it true that hosting companies store archives of sites, anti-terror servers, etc. for 3 months?

Hello!
I heard that it is possible that all hosters store all client servers even after deletion. How true is this?

Hosting dependent. If this is a virtual server or a site on a shared site, then yes, they store it for at least a month (most often), and if it is a physical server, then often everything is simply formatted when a new client arrives and orders this server. It makes no sense to store hard drives for a month after the client leaves, it's all very expensive.

They definitely don't store. The virtual machine is deleted immediately and permanently.

No. Specially not stored.
Maybe they are required by law to do so.
But so far - the storage of this data is nothing more than an accident.
