Can someone access the files on it without going to the computer?

Yes, it's safe. You shouldn't be paranoid.
When connecting to a computer, click "Do not trust" (this computer). iOS has pretty high security, so you don't have to worry.
The theoretical possibility of accessing smartphone files appears when it is connected to the Internet. That is, the computer has nothing to do with it. All you need is WiFi or 3G, and you are already in direct contact with Apple and everyone with whom it cooperates. But friends and work colleagues will still not be able to access the files - not that level. :)
