Mail is sent to only one server at a time, according to MX records in DNS. You can set the server priority - then the mail will be transmitted first to the server with a higher priority, if the first one is unavailable, to the server with a lower priority. You can set the same priority - then the server for transmission will be chosen randomly (robin). Mail will not be sent to two servers at the same time
